Make the standardized recipe the control document
A standardized recipe is a tested operating specification that repeatedly produces the expected quality and yield when the same ingredients, equipment, quantities, and procedures are used. It should identify the recipe and version; original yield and portion size; exact ingredients in order of use; ingredient form, quality, and purchase unit; weights and measures; preparation and cooking steps; equipment, pan size, batch size, and load pattern; time and temperature endpoints; holding, cooling, reheating, and storage instructions; portioning utensil or weight; allergen and diet information; expected finished weight or volume; and source or approval. Add production notes only when they are controlled and reviewable. Each field prevents a different failure. Ingredient form controls edible yield. Sequence controls dispersion and texture. Pan depth controls heat transfer. Endpoint controls safety and quality. Portion size links nutrition, cost, and number served. Version and approval prevent an untested substitution from silently becoming the new standard. The production record should capture the recipe version, planned and actual batch quantities, ingredient lot or substitution when required, start and finish, critical temperatures, actual yield, disposition, and operator. This separates the permanent standard from what happened in one run. A recipe is not standardized merely because it is typed neatly or used often. It must be verified in the operation, evaluated for acceptability, adjusted to the required quantity, and revalidated when a material ingredient, equipment, method, or yield changes.
