A production system organizes where and when food is prepared relative to service. The central design question is which activities are coupled to immediate demand and which are separated by distance, storage, or later finishing. Conventional production keeps preparation, cooking, and service close in time and usually place. A commissary centralizes production for one or more remote service sites. Ready-prepared production deliberately cooks ahead, then safely stores food for later service. Cook-chill and cook-freeze are specific ready-prepared pathways distinguished by refrigerated or frozen storage. Assembly-serve relies heavily on foods purchased ready to portion, assemble, or heat, shifting work from scratch production toward specification, storage, assembly, and final control. A display system prepares, finishes, portions, or holds food at the visible service point, often in response to demand. Each system moves work and risk rather than eliminating them. Centralization may improve consistency but adds transport and handoffs. Advance production may smooth labor but adds cooling, storage, traceability, and rethermalization. Point-of-service finishing may improve freshness but duplicates equipment and requires skilled control near customers. A hybrid can assign different menu items to different pathways when the interfaces are explicit.
