Control Food Hazards With Time, Temperature, and HACCP
Identify the hazard, route, and susceptible consumer
A food safety hazard is a biological, chemical, physical, or allergen agent that can cause illness or injury if uncontrolled. Contamination is the introduction or presence of the hazard. Cross-contamination moves microorganisms or other material between foods, hands, equipment, water, or the environment. Allergen cross-contact unintentionally incorporates an allergen into another food. Spoilage is an undesirable quality change such as odor, slime, gas, color, or texture. Spoilage can warn that food is unacceptable, but absence of spoilage never proves safety because pathogens and toxins may not change appearance, smell, or taste. Risk rises when a food supports pathogen growth or toxin formation, when a kill step is absent, when ready-to-eat food is handled after cooking, or when the consumer is highly susceptible. Adults 65 and older, children younger than 5, pregnant people, and people with weakened immune systems have greater risk of severe foodborne illness. Clinical operations therefore control approved source, separation, cooking, cooling, holding, hygiene, allergens, and traceability as one connected system.
